The Unknown Brewing Company Announces Plans to Open a Distillery

CHARLOTTE, N.C. –  We are excited to announce that today we began construction on The Unknown Wood & Grain Project – Our very own Distillery. This is phase one of a larger project to redo the entire front of The Unknown this will include a  rooftop bar, private event space, wrap around bar and roll up windows throughout the downstairs.

The Wood & Grain Project has been something the brewery has been wanting to accomplish for a long time, but after years of planning and the extensive licensing, the day is finally here. Owner Brad Shell says, “This is more of a small-project micro-distillery. Most batches will only yield a case or two of each style. We want to put our creative minds into the distilling side as much as we do in the beer. The concept is easy. Wood + Grain. We will be using some of the best grains in batches of Rums, Gins, and Bourbons  – with a twist. The twist is our plan to use rare barrels and aromatic woods to age our spirits. We will mostly be distilling small batches, one-offs, and collaborations.”

The Unknown hinted at this step months ago with their release of a Non-Alcoholic Ginger Ale for cocktails.  They say they will also be releasing a great tonic in 2018.  “For us, beer is one great way to flex our creativity, but at The Unknown, we always want to push ourselves to achieve and create as much in the craft realm as possible.”   We intend for the front of our brewery to be a beautiful space that emphasizes craft. This will also impact the look and feel so for this reason, we are adding on a rooftop bar overlooking downtown as well as an upstairs private event space. The whole look and vibe of our taproom will be transformed over the next few months. We have worked really hard with our Architects at Cluck Design and our GC Foard Construction to ensure that the taproom will remain open and only portions will be closed at any time. We hope to have everything complete going into 2018.   We encourage people to come in and see all these changes as they happen. Its going to be a fun adventure for us and the city we love.
