DuPont Introduces New Diacetyl-Fighting Enzyme

BRABRAND, Denmark — DuPont will present a new brewing enzyme for faster production of consistently tasty beer at BrauBeviale in Nuremburg, Germany, Nov. 10th to12th.

DuPont™ Danisco® Alphalase® Advance 4000 is a robust solution for brewers to reduce or completely eliminate diacetyl during beer fermentation. The enzyme keeps beer quality high while optimizing production capacity and saving on energy consumption.

Tackling a buttery off-flavor 

A well-known organic compound also present in butter, diacetyl develops naturally during beer fermentation. Its butterscotch flavor, however, is generally considered undesirable – creating a need to keep diacetyl levels low in the final beer.

Brewers typically achieve this by extending the beer maturation period. This ensures the diacetyl is broken down into flavor-neutral compounds once secondary fermentation is complete.

“The challenge for brewers is how to predict the rate of diacetyl reduction, which varies according to temperature, wort gravity, adjunct type and the level of free amino nitrogen (FAN),” says Iliana Yanez, global product manager – Brewing & Distilling Enzymes, DuPont Industrial BioSciences.

Shorter, uniform maturation

DuPont™ Danisco® Alphalase® Advance 4000 solves the issue by preventing the generation of diacetyl during fermentation. With a diacetyl level that is safely below the accepted flavor threshold, brewers can shorten the maturation period considerably, obtaining a uniform maturation, optimizing production throughput and cutting down on the energy consumed in the process.

“Extensive tests have shown that Alphalase® Advance 4000 is efficient across a broad spectrum of brewing protocols and adjuncts ranging from corn and rice to sorghum and cassava,” says Iliana Yanez.

“Importantly, Alphalase® Advance 4000 ensures reliable diacetyl control without side effects. The essential properties of the final beer are unchanged,” Yanez added.
