DENVER, Colo. — C Squared Ciders, a Denver, CO-based independent craft cidery announced the release of Drake, the second offering from their high end and barrel-aged Sailor Series. Drake is an English-American Hybrid Cider made with heritage Chisel Jersey apples. Chisel Jersey is a cultivar of cider apples that originated in the Somerset region of England and are bittersweet, meaning the apples are high in tannins and sugars, and low in malic acid. Drake was fermented slow and cold, using a mixed culture English yeast, and was then aged in neutral American oak for 8 months.
Landing at 5.4% ABV and with only 5g of residual sugar per liter, Drake is dry, complex, and a true representation of a heritage cider made from juice pressed at peak ripeness. Packaged in 500mL bottles with only 84 cases available, Drake will debut for purchase exclusively at C Squared Ciders at 4:00pm on Black Friday, November 23rd. C Squared is partnering with The Truffle Cheese Shop, one of Denver’s finest small batch cheese shops, to pair artisan cheeses with Drake and other ciders during the release event at their taproom. Bottles and draft will be available at select liquor stores and restaurants throughout C Squared markets the following week.
Since July 2015, C Squared has been producing and distributing their award winning Siren Series, which are American style ciders with an emphasis on balance and drink-ability. “The Sailor Series are a fun way for us to pay homage to old world, traditional cider making techniques and ingredients while adding a flare of our own,” says National Sales Manager, Eric Hatlestad. “Our Siren Series appeals to a wide array of craft drinkers, whereas the Sailor’s fit the demand for a more esoteric and boutique category of cider.”
Drake joins Cousteau, a French-American Hybrid Cider in the Sailor Series line up. Future ciders from the Sailor Series will only be released when properly aged and at the height of perfection. Each Sailor Series offering will be stylized by country of origin, and are an ode to different apples, yeasts, wood, and ciders from around the world that inspire C Squared Ciders’ makers.
