Wooden Soul: Heliotropic

Straw colored with a copper glow and haze ranging from high to moderate-low, this beer greets you with pronounced aromatics. Expect big vinous, passionfruit, plum, and tropical notes, with a hint of powdery bubble gum and fruit flavor from the original Dupont yeast blending seamlessly with fruity Brett character. When this beer is fresh out of the barrels it leans more towards tropical fruit, over-ripe fruit, and funk. As it ages outside of the barrel it becomes more vinous. On the palate, it is dry, waxy, tart, and well-balanced with fruity Brett flavors, with moderate to high carbonation. A great experience at any point along its path.
