PORTLAND, Ore. — This week, Von Ebert Brewing releases its Triple Dry Hopped (TDH) Volatile Substance, the second in a series of three spin-off recipes of its signature, award-winning Volatile Substance Northwest IPA.
“With our motto, ‘Where Tradition Meets Evolution,’ we wanted to celebrate our award-winning Volatile Substance Northwest IPA, a beer we might be most proud of, by making three variations in 2025,” said Sam Pecoraro, brewmaster of Von Ebert Brewing. “Our first one, Tropical Substance IPA sold out in mere days so we’re hoping to continue that success and demand with this triple dry hopped IPA varietal. This beer wouldn’t be possible without the awesome hops we brewed with from Pacific Northwest farms CSC Vineyard, C&C Hop Farms, TV Hops and Coleman Agriculture.”
Tropical Substance IPA was released in March, TDH Volatile Substance IPA in July and the final of these varietals, Saturated Substance IPA, will drop in November.
This week also marks a major milestone at Von Ebert Brewing’s recently opened N. Mississippi location (825 N. Cook St., Portland), where it’ll host its first patio concert on July 5 with funk band Jay Si Proof. Festivities begin at noon with a stein holding competition with a $100 gift card prize. Highly sought food truck, Har-BQ will be smoking, but get there early as it sells out every day. Har-BQ will be joined that day in the Von Ebert Brewing parking lot by food truck, Fatso’s Cheketos. Live music goes from 4-7 p.m.
You can enjoy the 2025 World Beer Cup Gold Medal winning Clubhaus Lager in a 20-ounce stein for just $3 and newly added beer slushies will be flowing. The beer slushie program will be going year-round at the N. Miss. location with a rotation of flavors.

Von Ebert Brewing was founded in 2018 by Tom M. Cook and Tom S. Cook in Portland, Oregon. Von Ebert Brewing is named after the family matriarch lovingly refer to as “Grandma Ebert.” The quintessential immigrant story, Grandma Ebert came to America from Germany via Ellis Island and relied on her grit and determination to create a successful life for her family here in the states. In that vein, the brewery has displayed those same traits and gained success through numerous World Beer Cup medals: 2025 Gold American Light Lager with Clubhaus, 2023 Gold German-Style Pilsner with Pils and 2024 Bronze Vienna Lager. Our moniker celebrates Grandma’s tenacity and honors our heritage. Von Ebert translates loosely to “House of Ebert” or in full English, “House of the Boar.”
