Fair Isle Brewing, a Seattle brewery specializing in exceptional lagers and saison beers, released Salacia today. The brewery recently partnered with Blue Dot Sea Farms to produce the new beer crafted with sugar kelp from Hood Canal.
Salacia is Salmon Safe and brewed with malted spelt from Eastern Washington and sugar kelp grown in the Hood Canal by Blue Dot Sea Farms to raise awareness and support our local marine ecosystem. Salacia is a bright and tart saison with a subtle salinity from the kelp contributing texture and layers of umami.
There isn’t an ingredient in food or beverage that is as impactful as U.S grown kelp. Not only is it grown with no fertilizer, pesticides, fresh water, and arable it also absorbs excess carbon dioxide, rebalances the oceans chemistry, and creates habitat for local wildlife. Known for its briny and umami packed flavor, sugar kelp is also a great source of trace minerals like iodine, zinc, iron, and magnesium. It’s also the only source for the rare marine anti-oxidant fucose.
Created to raise awareness and support our local marine ecosystem, this year we are donating to the American Academy of Underwater Sciences’ (AAUS) Scientific Diving Symposium. AAUS is the standard setting body for scientific diving safety and is also an organization that supports marine science and marine scientists.
Join Fair Isle this Thursday, March 27th for an evening of Kelp and Oysters with the release of Salacia. They will be shucking oysters from Bay Water Shellfish that grew on the kelp and cooking up unique dishes made with Sugar Kelp from the farm.
