We live only once, but what remains of us may exist eternally. Such is the case with the wondrous dead and dried sumac shrub, the woody carrier of a splendid fall berry that imparts profound lemony flavors.  Malted 6 row, rye and oats, along with raw NC wheat, lemon peel and a splash of Motueka hops provide the canvas for roughly 85lbs of sumac, which is soaked in the beer post-fermentation and added back. Enjoy woody and citrus aromas with sharply tart and tannic flavors.
