- The purpose of this position is to monitor beer throughout the cellaring process and successfully operate the production brewhouse. Incumbent documents fermentation processes and relevant data, harvests yeast from preceding fermentations, carries out necessary dry-hopping and other additions, transfers beers to and from various vessels with centrifugal pumps and centrifuges, oversees the carbonation process, cleans tanks and vessels as needed, etc. Incumbent is able to brew beer consistently with sanitation standards and predetermined specifications (flavor, appearance, aroma, specific gravity, etc.). Incumbent keeps all necessary records and data associated with their brews in an organized and accurate manner. This position relies heavily upon a strong work ethic and a dedication to a clean and organized work area. Often, responsibilities are accompanied by overlapping tasks as assigned by the Waterfront Lead Brewer, Waterfront Production Manager, and Head Brewer. Varying schedule to include weekends, evenings, holidays, and extended hours as business dictates.
Schedule: Four/10-hour shifts. Shifts rotate across all days of the week on a three-week cycle.
Hourly Range: $18-$27/hour DOE
Cellar Essential Functions:
- General
- Tank cleaning with caustic and acid, and tank sanitation with peracetic acid
- Harvesting yeast into storage tanks and kegs
- Dry Hopping from a scissor lift into the tops of tanks
- Dumping yeast, hops, and trub from tanks
- Transferring beer through centrifugal pumps and centrifuge
- Monitoring Dissolved Oxygen through Anton Paar Cbox
- Carbonating Beer to spec and checking with Zahm or Anton Paar Cbox
- General cleaning of the brewery
- Input into Ekos(Or other brewery inventory software) task and ingredients used in process
- Inventory counts assigned by Inventory and Procurement team
- Tracking and recording pH, gravities, temperature, pressures throughout fermentation.
- Participation in beer sensory through DraughtLab Pro
Shift Brewer Essential Functions:
- General:
- Cleaning and sanitizing all vessels and instruments used during the brewing process
- Milling grain
- Mashing in grain into the Mash mixer
- Lautering wort into the Brew Kettle
- Boiling wort with precise hop additions
- Transferring wort into Whirlpool
- Sending wort through heat exchanger and into fermenter
- Pitching a healthy yeast, taking care not to compromise the sanitary conditions of the fermentor or the yeast strain
- Reading all instruments necessary throughout the brew process
- Maintaining a clean and organized work area
- Attending all scheduled employee meetings and mandatory events
- Continued education in brewery science, brewing ingredients, and processes, etc.
- Evaluating and improving pre-established processes in order to increase efficiency and promote safe working conditions (and create better beer!)
- Troubleshooting any equipment issues throughout the brewing process
- Filling in for absent co-workers as needed
- Communication:
- Maintaining a high level of communication with leadership, department heads, managers, and staff
- Respectfulness & professionalism in all communication
- Monitor and post on Slack (or a similar communication platform) with information on job duties
- Attend brewery department meetings as assigned
Knowledge, Skills, Abilities, & Ideal Qualifications
- Must be 18 years of age or older
- At least one year of previous production brewing experience preferred
- Basic math competency, including but not limited to addition, subtraction, multiplication, division, and computation of rates, ratios, and percentages
- Basic mechanical competency
- Ability to read labels on chemicals
- Ability to communicate with coworkers in a high-noise environment
- General knowledge of occupational hazards and necessary safety precautions associated with work
- Must possess Forklift Operator’s certification (may be obtained within the first 15 days of employment; must be able to safely operate brewery equipment, including but not limited to forklifts, pallet jacks, etc.
- Must be able to adapt to frequent changes in workload and adjust priorities quickly as circumstances dictate
- Valid OLCC Server’s Permit preferred
- Cicerone Certified Beer Server Certification or greater preferred
