Bear’s Fruit is a rapidly-growing kombucha company on a mission to bring handcrafted fermented & gut health products to every state across the U.S. Based in Brooklyn, we handle 100% of our kombucha production in-house at our Industry City HQ to ensure the highest production quality possible. As Bear’s Fruit expands nationally, we’re looking for a new member of the pack to grow with us as we build our new brewery to meet the growing demand.
The Head Brewer is responsible for the entire brewing process from start to finish. You'll work closely with the brewmaster / co-founder as well as the production team to ensure quality standards are met, develop new fermentation methods, and keep production on track to meet sales goals. The Head Brewer is a hands-on member of the brewing team, meaning you'll be expected to jump in to support any aspect of Bear’s Fruit HQ operations. The Head Brewer must communicate effectively and work across departments, be creative and flexible, and always lead by example.
Oversee all brewing operations - boiling tea, fermentation, flavor formulation according to SOPs and recipes.
Manage inventory of raw ingredients, consumables, and supplies needed for brewing schedule and production demands.
Maintain positive working relationships with supply chain vendors and identify new partners when necessary.
Record all relevant data and ensure logs are filled out completely including traceability, batching. cleaning, and QC logs.
CIP of all associated brewing equipment and manual cleaning of all work surfaces and prep areas.
Plan and schedule with the production team to meet sales demands and new product launch objectives.
Perform lab work to ensure fermentation of batches proceeding as expected.
Oversee sensory analysis and training to ensure consistent quality from batch to batch.
Develop new recipes and formulations for new flavors and product lines in conjunction with brewmaster.
Help commission and install new equipment. Develop preventative maintenance programs for brewing equipment to ensure minimal downtime.
Maintain an active food handlers license with a strong understanding of all things food safety.
Manage and train new members of the team.
Lead by example and set a “safety first culture” by ensuring SOPs and food safety / hygiene procedures are followed at all times. Develop new SOPs as needed.

Must have 3-5 years experience at a craft brewery and a passion for all things fermentation.
Formal brewing education from an accredited brewing program is a big plus.
Comfortable with lab work, quality assurance, and sensory analysis.
Must be computer literate (MS Word, Excel, Google Docs). Experience with HMIs and automation software is a plus.
Past experience in successfully creating craft beer and/or kombucha recipes.

Regularly lift and/or move more than 50 pounds without assistance.
Twist, bend, kneel, work in a loud, wet factory environment
Able to operate machinery including production equipment pallet jacks, and hand trucks along with specialty hand tools.
