Scorched Earth Brewing Co, an award-winning brewery located in Algonquin, IL, a community located along the banks of the scenic Fox River located in the Chicago metropolitan area, brews styles intended to spark curiosity and passion of what beer is and can be. The brewery, situated within a small warehouse district, includes a 15 BBL Specific Mechanical brewhouse, fermentation vessels including open fermenters, a one-year old Cask ACS V5 canning line, and a pilot brew system. It also includes an industrial-farmhouse tap room and beer garden where locals come to chill, play a game of shuffleboard, grab a bite from a food truck, and relax. 

We are looking for a Lead Brewer to help manage the brewery’s day-to-day operations. The individual will work closely with the brewery’s founders to manage the production process, soup to nutz! It’s important that the individual be open-minded, creative, and collaborative, with an eye towards innovation. Additionally, the applicant must demonstrate the following knowledge, skills, and abilities necessary to be our Lead Brewer including:

  • Two (2) plus years’ experience as a professional brewer, with experience and knowledge in formulating and brewing recipes; three (3) plus years’ preferred;
  • Experience and knowledge embracing the use of special ingredients like fruits, coffee, honey, chocolate, syrups, and other adjuncts;
  • Experience managing and propagating different yeast strains, including monitoring yeast health;
  • Experience kegging, bottling, and canning (Cask canning line experience preferred, not required);
  • Experience cellaring and packaging barrel-aged beers preferred (we can teach this one);
  • Experience brewing, cellaring, blending, and packaging sour beers in a professional setting preferred;
  • Formal brewing and related education is not a requirement, but is preferred;
  • Lab experience is a plus;
  • The ability to communicate with and manage others; 
  • The ability to work on your own with little or no supervision;
  • Ability to demonstrate strong problem-solving skills; mech. skills are preferred, not required;
  • Strong verbal communication and organizational skills;
  • Passionate about all things beer and ability to communicate beer knowledge;
  • Ability to work flexible hours, including weekends;
  • Ability to maintain valid Driver’s License;
  • Ability to maintain a clean and safe workplace;
  • Must be at least 21 years of age;
  • Ability to pass drug and background check.

In addition to the bullets listed under the Knowledge, Skills and Abilities section listed above, the Lead Brewer will also have the following additional Duties and Responsibilities, including, but not limited to:

  • Brew and package award-winning beer with in a safe manner, consistent with the brewery’s vision;
  • Perform all brewing tasks with cleaning and sanitizing procedures as one of the primary focus at all times;
  • Ensure yeast health (viability and vitality), monitor for bacteria or other unwanted bugs, and propagate clean healthy yeast;
  • Utilize the pilot system to provide additional opportunities for taproom business, as well explore new raw materials, brewing processes, and beer styles for possible scale-up opportunities;
  • Lead and manage others on a small brewing team, including training and day-to-day oversight;
  • Help maintain standard operating procedures (SOPs) for the brewery, including safety; cleaning and sanitizing; quality, etc.;
  • Manage inventory including brewery equipment and supplies, raw materials, packaging supplies, beer and more;
  • Manage the spent grain program, including trying to seek farmers or other opportunities to reuse, rather than dispose of it;
  • Record and analyze all brewhouse information accurately and legibly;
  • Be computer tech savvy and have the ability to use Google software suite (Google Docs, Google Sheets, etc) or Microsoft equivalent;
  • Give tours, and participate in festivals, competitions, and special events as required;
  • Help to educate tap room staff and retail accounts about the brewery’s beer;
  • Operate a forklift.

Physical demands at the brewery include, but are not limited to:

  • Working with potentially dangerous equipment, high noise levels, and hazardous materials;
  • Standing for long periods of times;
  • Working in hot, cold, and wet environments;
  • Climbing stairs and ladders;
  • Bending, moving or lifting 75 pounds safely;
  • Using repetitive motions when brewing.
