About The Bruery 

The Bruery is a boutique craft brewery located in Orange County, CA.  The company goes to market under three brand names; The Bruery, Bruery Terreux, and Offshoot Beer Co, each offering a high quality, unique offering.  The Bruery specializes in barrel aged and experimental ales, Bruery Terreux is focused on innovative wild and sour ales, and Offshoot Brewing Co. is the company’s newest brand that focuses on a rotational hop-forward offering. 

The company has built a strong following among a passionate base of customers, and more than half of The Bruery’s overall sales are direct-to-consumer through the company’s society membership programs and Orange County tasting rooms. The company selectively distributes its products to a network of distributors across the U.S. with a focus on craft beer-centric retail and restaurant accounts.  

Founded as a small, family-run business in 2008, The Bruery takes its unique moniker from founder Patrick Rue’s family surname.

Patrick picked up home brewing as a hobby, which later became an obsession, as a distraction from the banality of law school. Early on, while driving his wife Rachel mad with the messes that he would leave on the kitchen stove, Patrick was winning awards for his beers. Upon finishing school, he took it upon himself to draft a business plan for The Bruery rather than study for the California Bar exam – a risky endeavor that still shows through today in the creative, genre-tilting beers that The Bruery prides itself on.

The Bruery was founded on the excitement that Patrick felt in his early years of homebrewing and continues to strive for that same passion in every aspect of its business today.  The company has never stopped challenging itself to develop distinctive and imaginative beers, and constantly pursues improvement.  The Bruery produces dozens of original beers each year with a perpetually growing list of ingredients and inspirations . Nearly half of The Bruery’s beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

About the Role:

The primary accountability for this role is leading and managing the wort production, fermentation and finishing for the Pilot System within The Bruery production.  This position requires a great deal of flexibility in every aspect of brewing, fermentation, and packaging. The right candidate will be comfortable in scheduling, executing and guiding the Pilot System with safety, quality and productivity top of mind. 

Essential Duties (include but not limited to):

  • Schedule and oversee beer production on a 3 bbl system

  • Manage the production of wort for both The Bruery, Bruery Terreux, and Offshoot Beer Co. product streams 

  • Responsible for raw material procurement directly related to pilot beer production including but not limited to small purchase specialty ingredients

  • Coordinate with and take direction from Director of Production and other leadership to plan and prioritize projects

  • Maintain a clean and organized brewery environment

  • Review and adjust recipes in addition to manipulating process to meet specifications

  • Monitor fermentation profiles to ensure proper performance and adjust accordingly; provide direction on changes to fermentation schedule

  • Responsible for processing all production in Obeer SAP; maintain paperwork

  • Responsible for participating in basic maintenance over Pilot brewing equipment

  • Take and maintain ownership of relevant Standard Operating Procedures (SOPs) within department

  • Adhere, support and participate in a culture of safety and quality being top priorities

  • Collaborate on recipe development. Support scale accurately from pilot batch size to production

  • Building The Bruery’s brand through promotional activities both on-site and off-site

  • Collaborate and work with the other production departments and respective managers (Packaging, Quality, and Bruery Terreux). Work with other departments (Demand Planning, Finance, Marketing, Tasting rooms and Societies) to advance business goals of company

Essential Requirements:

  • Minimum of 3 years professional brewing experience required

  • Extreme focus on quality and safety

  • Ability to work with significant autonomy and maintain a high level of accountability

  • Be able to perform all job requirements including brewing, cellaring, yeast collection and propagation, and dry hopping

  • Working knowledge of basic maintenance of pumps, valves, and other equipment commonly found in a craft brewing environment

  • Proven experience with Microsoft Office, Google Docs, and preferably  Orchestrated Beer

  • Desire to push the boundaries of what beer is

  • Work across a multiple shift environment as needed

  • Physically be able to bend over, twist, kneel, climb stairs, stand all day, lift 55+ pounds, work in a non-temperature controlled environment and repeatedly handle hot and cold liquids

  • Work on a ladder periodically up to height of 18 feet

  • Forklift certified or ability to become certified within 30 days of hire
