JOB TITLE: Junior Cellarman

DEPARTMENT: Operations

REPORTS TO: Senior Cellarman

EFFECTIVE DATE: 6/19/2017

SUMMARY: Working in the Fermentation Cellar, focusing on monitoring fermentations, dry-hopping, yeast harvesting, filtration (Della Toffola horizontal leaf filter), and carbonating beer. Cellarman will also receive training in the Brewing department and providing support to Brewers as needed.

DUTIES AND RESPONSIBILITIES:

Cellar:

  • Operates cellar equipment in a safe and efficient manner.

  • Follows SOP’s to meet quality specifications and ensure proper keg line and canning line

    operations.

  • Completes all necessary paperwork accurately and on time.

  • Maintains yeast disposal, and grain area cleanup schedule.

  • Performs all tasks in an efficient, safe and productive manner.

  • Maintains inventory as needed.

  • Reports and low levels of inventory to your supervisor when necessary.

  • Monitors gravities, temperatures, DO, and carbonations as needed.

  • Ensures security procedures are adhered to throughout the building.

 

Brewing:

  • Maintains barrel program.

  • Maintains cleanliness of all areas in the Brew House.

 

Lab:

  • Conducts aseptic and environmental sampling throughout the brewery.

  • Ensures gauge precision of brewing, cellaring, and laboratory equipment.

  • Data entry including brew, fermentation, cellar, QA/QC, and software Ekos Brewmaster.

  • Assists with implementation of sensory panel.

  • Communicates regularly and efficiently with team members.

  • Assists other departments when necessary, including but not limited to Cellars, Packaging,

    Maintenance, and QA/QC/Lab.

  • Performs other related duties as assigned by management.

 

SUPERVISORY RESPONSIBILITIES:

• This position does not have supervisory responsibility.

 

QUALIFICATIONS:

  • High school diploma or general education degree (GED), or one to three months related experience and/or training, or equivalent combination of education and experience.

  • Certificates, licenses and registrations required: Cicerone Certification highly recommended

  • Computer skills required: Microsoft Office, Mac IOS, Brewing Software

PHYSICAL DEMANDS AND WORK ENVIORNMENT:

  • Continually required to stand, walk, utilize hand and finger dexterity

  • Frequently required to sit, climb, balance, bend, stoop, kneel or crawl, talk or hear, taste or

    smell

  • Continually exposure to wet and/or humid conditions (non-weather)

  • Frequently work near moving mechanical parts, in high, precarious places, around fumes,

    airborne particles, or toxic chemicals

  • Occasionally exposure to outside weather conditions

  • Frequently exposure to extreme heat or cold (non-weather)

  • While performing the duties of this job, the noise level in the work environment is usually loud

  • The employee must frequently lift and/or move up to 55 pounds and be able to move kegs

    which weigh close to 165 pounds.

  • Specific vision abilities required by this job include: Close vision; Distance vision; Color vision;

    Peripheral vision; Depth perception and ability to adjust focus

  • Specialized equipment, machines, or vehicles used: Forklift, pallet jack, pallet stacker
