Job Title: Quality and Sensory Manager

Solemn Oath Brewery is seeking a full-time Quality and Sensory Manager to establish and manage all lab and sensory programs within the brewery. We are a brewery celebrating our sixth year in Naperville, Illinois. We’ve seen sustained growth in past years and anticipate more in the immediate and long-term future. We’re looking for a candidate to start August 1st, 2018 that meets the requirements listed below.

Goal: To build and run a brewery QA/QC program that utilizes both qualitative (Sensory) and quantitative (Lab) analytics to maintain the highest levels of quality beer production.

This position includes, but is not limited to, the following:


  • Collect, Synthesize, and Report on QA/QC data across the brewery

  • Run routine analytical analyses on beer samples including: pH, gravity measurements, alcohol, and other analytical tests.

  • Run routine analyses of packaged beer for oxygen, carbon dioxide, fill level, etc.

  • Prepare microbiological media, sterile plating and microscopic analysis of microbial growth

  • Work with production staff to manage yeast across the brewery.

  • Conduct inspection and analysis of package integrity and specifications.

  • Utilize sterile technique to obtain and process microbiological samples.

  • Coordinate quality analyses ensuring accurate results, timely completion, and proper responses and notification.

  • Other routine laboratory testing, as needed.


  • Conduct regular sensory panel per SOPs, instructions, and training. Enter sensory data and document results of analysis in appropriate form(s), log(s) and/or database(s).

  • Take appropriate action following decision trees and/or out of control action plans to validate results and/or alert recipients of results especially when analysis indicates product/process out of control.

  • Build brand “true to brand” standards and work with sensory panel to validate all beers leaving the brewery.

  • Staff Education of brand standards and brewery related off flavors


  • Maintaining Lab/Sensory Area

  • Act as an integral member of the Solemn Oath Brewery team

  • Availability for occasional nights and weekends for events outside of normal business hours

The ideal candidate for this position would have the following qualifications:

  • Highly motivated individual able to plan and manage personal work and schedule.

  • Ability to adapt to changing priorities, meet deadlines, and work well under pressure

  • Ability to exercise initiative and judgment as well as make decisions within the scope of assigned authority

  • Bachelor's degree in a science-intensive discipline (e.g. Chemistry, Biology, Biochemistry, Microbiology, Food Science, etc.)

  • QA/QC laboratory experience in an applicable field

  • Participant or Manager of a Sensory Panel in an applicable field

  • Ability to operate laboratory instruments and perform basic instrument maintenance.

  • Knowledge of basic laboratory procedures and techniques.

  • Works effectively both independently and as a team

  • Strong technical, troubleshooting, and problem-solving skills with attention to detail

  • Solid interpersonal skills and team orientation.

  • Skilled in Microsoft Excel, PowerPoint and Word.

  • Understanding of the brewing and packaging process, HACCP and Good Manufacturing practices for food manufacturing a plus. Standard ASBC methods.

  • Demonstrates ability and desire to obtain additional skills and knowledge in area of expertise (e.g. continued education, special training, certification)
