THE BIG PICTURE

The Brewing Manager reports to the Production Manager and is responsible for managing the brewing team as well as the brewing process.  S/he plays an active role in staff training and SOP enforcement. The Brewing Manager will follow and develop brewing procedures and recipes established for and approved by Modern Times Beer. Candidates must share Modern Times’ commitments to quality, safety, business ethics, and continuous innovation.

THE EVERYDAY VIEW

-               Responsible for scheduling, training, and supervising brewing staff

-               Identify needed continued brewhouse process improvement including update and implementation of SOPs

-               Ensure accurate documentation of brewing activities on appropriate brewing forms

-               Work alongside the production and maintenance teams to schedule brewhouse downtime and maintenance operations.

-               Develop and maintain continued education and engagement opportunities for brewing staff

-               Raw materials receipt, storage, and retrieval for brewing

-               Keep an accurate inventory of brewhouse chemicals, minerals, gases, general supplies and order as needed

-               Milling up to 3,000 pounds in 50-55-pound bag increments, in accordance with a brew/recipe sheet, over approximately 45 minutes

-               Wort production and hopping to correct sugar and hop concentrations as dictated by the recipe/brew sheet

-               Filling out brew logs, noting any discrepancies, and performing associated math equations such as mixing ratios and serial dilutions

-               Engaging/disengaging valve and frequency drives associated with the brewhouse

-               Spent grain removal, which includes the manipulation of a manual screw valve.

-               Following established procedures to clean the brewhouse, fermenting and brite tanks

-               Safely handling cleaning chemicals, and using the prescribed amount for each task

-               General cleaning of horizontal, vertical and sub-grate surfaces

-               Other tasks may be assigned as needed


DESIRED SKILLS AND EXPERIENCE

-               Must be 21 years of age or older at the time of application

-               Able to pass a post-offer, pre-employment background check 

-               Minimum 2 years of commercial production brewery experience

-               Minimum 2 years of people manager experience

-               Knowledge and familiarity with Cellar and Packaging operations and SOPs

-               Strong work ethic and self-starting attitude

-               Good interpersonal skills and team spirit

-               Prior experience operating a forklift and pallet jack required

-               Evening, weekend, holiday availability required

-               Ability to work any shift in a 24/7 production environment required

-               Strong interpersonal skills and a love for meeting and interacting with people

-               Thorough attention to detail and desire to take initiative

-               Must adhere to company’s policies and procedures

-               Desire to work in a fast-paced, growing company

PHYSICAL AND MENTAL REQUIREMENTS

-                      Able to stand for prolonged periods

-                      Able to stoop, crawl, twist, turn, lift, kneel, climb ladders and stairs

-                      Able to manipulate valves and clamps

-                      Able to read and follow written English instructions

-                      Able to regularly lift/carry 44-pound boxes

-                      Able to regularly lift/carry 55-pound bags above waist level

-                      Able to regularly twist, turn, kneel, climb, stoop, bend, crawl, lift and carry supplies and equipment weighing up to 75 pounds using appropriate techniques and tools

-                      Able to lift/move 165 pounds with appropriate equipment and/or assistance

-                      Able to proficiently stack and move barrels on barrel racks

-                      Able to comply with safe chemical handling procedures, including personal protection equipment such as gloves and goggles

ABOUT MODERN TIMES

Modern Times is a 30bbl production brewery in the Point Loma neighborhood of San Diego. Modern Times is named after a beautifully crazy utopian community founded in 1850, and (almost) all of our beers are named after real utopian experiments or mythological utopias. Today, we're distributed throughout Southern California, San Francisco, the Central Coast, Maui, and select international markets. We operate a tasting room at the brewery, as well as in San Diego’s North Park community. We plan to open a pilot brewery, restaurant, & specialty coffee shop in Los Angeles in 2017. We brewed our first batch on May 18th, 2013; our beer went on tap for the first time on June 24th, 2013; we held the soft opening for the Lomaland Fermentorium tasting room on August 9th, 2013; and our Grand Opening was September 7th, 2013.
